Ingredients:
1½ cups (200g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ tsp cinnamon
1 cup (100g) old-fashioned rolled oats
3 medium ripe bananas, mashed (about 1 cup)
½ cup (120ml) sunflower or vegetable oil
2 large eggs
½ cup (100g) granulated sugar
¼ cup (50g) brown sugar
1 tsp vanilla extract
½ cup (90g) chocolate chips (plus extra for topping, optional)
Directions:
Preheat Oven:
Preheat oven to 375°F (190°C).
Line a muffin tin with paper liners or grease lightly.
Mix the Dry Ingredients:
In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and oats.
Mix the Wet Ingredients:
In another bowl, whisk mashed bananas, oil, eggs, granulated sugar, brown sugar, and vanilla extract until smooth.
Combine:
Pour the wet ingredients into the dry mixture and stir until just combined.
Fold in the chocolate chips.
Fill & Bake:
Divide the batter evenly among the muffin cups (about ¾ full).
Sprinkle extra chocolate chips on top, if desired.
Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
Cool & Serve:
Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
Serve warm or at room temperature.
